In 2014 Tracey began working with the magical, biodynamic Filigreen Farm in the beautiful Anderson Valley. In addition, we purchased two Nomblot concrete tanks for fermentation vats. Together the vision of making Ramato Pinot Gris came to life! Ramato is a savory, textural experience boasting “funky” aroma and flavor. Less than a week on the skins after full destemming and then fermentation completes in neutral French oak barrels.

Ramato is the essence of early Fall. It’s a wine for the tea lover, with grippy tannins and lively texture. Our ‘copper’ sipper (‘Ramato’ in Italian), it is the rosé of autumn, sassy, suave and imaginative. Notes of dried apricot, hibiscus, rhubarb, savory herbs, and a touch of funk make this wine dimensional and unforgettable. Pair with Membrillo + Manchego, mushroom pasta, pumpkin soup, pork and potatoes, roasted root vegetables, or try our staff favorite, Soy-Glazed Salmon Hand Rolls from NYT Cooking

Winemaker Note: In 2021 while suffering the catastrophic Caldor Fire in the El Dorado region where 50+% of my production is farmed I found myself calling a pick date beyond optimal for acidity. As a result, during blending in the Spring, I adjusted the acidity with an addition of Tartaric Acid rather than tweaking with another wine due to the fact I needed a bigger adjustment.
